116 Degrees calls for Chicken Pasta Salad

The temps ran all the way up to 116 this week, and I am really, really tired of it by now.  So even though I am inside in the cool A/C, just looking outside makes you warm and takes your appetite away.  Time to grocery shop, so it was also time to clean out the fridge and use up what I had.


Bow tie pasta. some hard boiled eggs, feta cheese, onions, chicken, olives and tomatoes.


 Cook pasta and then chop hard boiled eggs,  onions (red onions looks prettier, but I didn't have any), tomatoes and slice olives.  I used 2 cans of diced chicken breasts, 1/3 c. feta cheese and mixed all in with the cooled pasta. Drizzle with vinegrette dressing, cover and place in the fridge to chill thoroughly.


 A glass of white wine and some pasta salad make a really nice cool dinner for a super hot summer day.

  1. 116 degrees!!! I can't imagine! That chicken pasta salad sounds delish! All three sons will be gome this weekend and I think I need to make this , we haven't been all together since Christmas! I am so excited!

  3. Have you noticed that even the water coming from the faucet is warm?! I don't know how y'all cope with 116, it sounds unbearable. We had weeks of low 100s that were bad enough. This week we're in the 90s which seems cool after that. The pasta looks delish, I'm copying it to try sometime soon. Hugs ~ Mary

  4. Your salad looks delish Marty! It's been so hot here for so long that salads are about all we eat these days too. Stay as cool as possible and just remember, fall is around the corner.

  7. OMG, I will NOT complain about our heat ANY more!!!!!!!!!!!!!!!!!!! 116 degrees is almost unimaginable! Your chicken sald sounds GOOOOD! Last night we went up to a little cafe nearby because we were having a showing from 6-7. They ahve a pesto chicken salad wrap that is DELICIOUS, and that is what I had. Joe had chicken fajitas.   8. looks yummy Marty. I cooked a turkey wednesday night so it would shut itself off about 4 am and not heat the house up during the day. I pulled it apart and bagged it up. Now I know what to make with one of those bags..

  11. I am doing the same exact thing, making a Chicken Pasta Salad for our dinner this evening. It is just too hot and muggy to cook and who has an appetite in this heat I ask you?

  14. Oh my goodness! I thought I had it bad when it reached 106 here, but I can't even fathom 116! Your pasta salad looks like just the cool meal for such a hot day! Hopefully you'll have some cooler temperatures roll in soon, in the mean time, keep the ice trays full:)

  15. Whoa! 116 degrees is mighty warm. Your pasta salad looks super yummy and even though the temps are not nearly as high as yours, this seems like a perfect summer dish.

    Oh, my goodness...we had 111 degrees a couple of times...but never 116! Like you, I've had enough of triple digits for this Summer!!! Yesterday, we had everything out of the fridge...no cooking...for our lunch! Your pasta salad looks delicious!!! Perhaps the only GOOD thing to come of this heat is our creativity to keep cool!

    116 degrees! OH MY HECK! I can hardly handle the mid to high 90s we've had this year. I'd never survive 116 degrees!

  25. The heat is not for me......if this continues, I'll be moving to northern Canada!!! Been living on salads, sandwiches( BLTs with yummy garden tomatoes), fresh veggies......I grocery shopped today and cleaned out the fridge like you....started brand new. I bought a rotisserie chicken for dinner that will last me for 3 meals at least, what a bargain at $4.99.....nuked a potato, tossed a salad. The fresh fruit has been divine but how much of that can one eat??? keep cool.....

  26. It's such a chore trying to feed everyone when it's so hot!! You did well,my girl. It looks yummy! We had a lovely day here but... it's supposed to be winter. Hopefully we have rain tomorrow - our crops are dying of thirst. The joys of farming......
