Cozy, Comfort Food

We have had some really cool days and evenings for the desert, so I have been in the mood for some really yummy comfort food.  One of my favorites is 

Black Angus Baked Potato Soup

I found this recipe online at CopyKat.com and it is soooooooo good.  Thought you might like some too.
  • Prep time: 10 minutes
  • Cook time: 10 minutes
This soup is hardy and makes a deliciously filling meal!

Ingredients

  • 4 large baking potatoes
  • 2/3 cup butter or margarine
  • 2/3 cup flour
  • 6 cup milk
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 4 green onions -- chopped and divided
  • 12 slices bacon -- cooked and crumbled
  • 1 1/4 cup cheddar cheese -- shredded and divided
  • 8 ounces sour cream

Instructions

Wash, dry and prick potatoes with fork. Bake potatoes. (I wrap mine in wax paper and then bake in the microwave.  4 potatoes on high for 12 minutes and they are done. ) Let cool. Cut into half lengthwise and scoop out pulp; set aside. Use skins for something else, such as stuffed potato skins. Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk, cook over medium heat, stirring constantly until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 Tbsp. green onion, half the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream to taste.   Add extra milk if necessary for desired consistency. Serve with remaining green onions, bacon and cheese.  Makes 4 really hearty servings.

  7. Love a good baked potato soup - wish I had a bowl about now. Thanks for sharing the recipe. A local deli makes a good one and usually has it on Fridays, but did not want to deal with the crowd today.

  9. Mercy! This looks like the ultimate potato soup. I'm saving this one to try after I "peel a pound" or two off with my low cal veggie soup.
    Yours sounds and looks sooo good...I may have to make it this weekend.
