Dinner's In The Pot

Sometimes I just crave some good old fashioned country cooking and a hearty stick to your ribs meal, but with these really hot temps, I just can't see turning the oven on or watching a pot on the stove all day.  That's why I love my crock pot so much.  Perfect for these kind of days.

I can play all day and come home to a big pot of Vegetable Beef Soup.  Comfort food at it's best.








 I make mine really simple - - -


I don't measure, I just fill up the pot

Potatoes Diced in medium chunks
Onion Diced in medium chunks
Baby carrots - however many you want
Celery - 2 large stalks chopped
Big package of stew meat - ( I want lots of leftovers - So good the second day )
Pepper to taste
Garlic salt to taste
Bay leaf
Fill pot with 1/2 water and 1/2 beef broth ( You can use the beef crystals too and all water.)
Sometimes I add a pkg. of dried Onion Soup Mix.

Turn on high to start and when it bubbles, turn down to low and let it cook all day.  SOOOOOOOOOOOOOO   GOOOOOOOOOOD.


Just add a salad and a hot biscuit and you are ready to enjoy.  Good for you and low calorie too.

I was craving soup tonight and hubby and I had a wonderful Italian soup with zucchinis, carrots, potatoes, some White beans, parmesan cheese, etc. and it was just what I wanted too! Marty yours looks even better, I love it with some meat in it too! Thanks for the easy recipe idea.

  4. Looks delicious! I love soups like this where you don't measure, you just add as much of each ingredient as you want. Nothing better than leftover soup!

  5. One of my favorite kinds of soup...a hearty stew, a big slice of onion and a hunk of cornbread, dripping with butter....OHMY....

  6. I was craving beef stew or beef / vegetable soup the other day. Then it got hot and humid for a few days and the craving went away. Now we are back to chilly temps and you have me craving this again...I think I know what is going on to the grocery list for the next shopping day! :)

  8. Hi Marty. I LOVE soup .. but it's still so blamed hot here that I haven't given hot soup a thought...until now. I have crock pots but tend to use my slow cooker. Since Summertime weather is still with us, I will put soup making on the back burner...so to speak.
    However..I am INSPIRED! :)
    Still no pictures..so..not sure if I can join my favorite Tuesday "meme"... :(
