Here is one of my favorite recipes!
Cheesy Ranch Chicken Enchiladas!
- Chicken breast, 3 boneless skinless
-Ranch dressing 3/4 cup (divided)
-Salsa, 1/2 cup
-Cheese, 1 cup
-Ranch seasoning, 1 package
-Taco seasoning, 2 tablespoons
-Flour tortilla, 4
Preheat the over to 350 degrees F. I started by cooking my chicken and when it was still warm I tossed it in my Kitchen Aid. The Kitchen Aid makes PERFECT shredded chicken! I love using it! If you don't have a Kitchen Aid then just use two forks pulling in opposite directions to get your chicken shredded. Once my Chicken was shredded I added taco seasoning and ranch seasoning. In a separate bowl mix 1/2 cup ranch and 1/2 cup salsa together. Now start filling your tortillas. Ranch salsa, ranch chicken, and cheese. Roll and top with more cheese. Bake your Enchiladas at 350 degrees for 25-30 minutes.
Cool and serve with a drizzle of the remaining ranch on top! Hope you enjoy the recipe! Let me know how it turns out for you!
