Last Minute Holiday Entertaining & A $100 Visa Gift Card Giveaway




With the Holidays right around the corner and friends and family gathering from far and wide -

 I love the saying 

Make new friends but cherish the old - some are silver and some are gold.

I am always amazed at how fast time flies by and suddenly we realize it's been a year or more since we've seen a special friend or loved one.

They call and say they are in town and would love to get together -

I want to always have an open door, so I keep a few basics ready for any occasion.  A few staples in the freezer and I can have a fabulous dinner on the table in no time.  

Everyone loves pie, so having a Marie Callender's pie on hand is always a winner.  Dutch Apple is a crowd pleaser for sure and can go from freezer to table in less than an hour.


Pull out a casserole from the freezer at the same time and they can cook together.


Who doesn't love a big pan of enchiladas.  Put them in the oven with the pie and they will be ready in no time.


60 minutes later - - - - - -

Fresh out of the oven and wow, the house smells fabulous.


 Just slide it into a pie plate and it is company ready.


The enchiladas look amazing - -



and the salad you put together is ready - -

and company will think you planned this all day.

  7. Love eating enchiladas those look too yummy! At the moment I`m trying to empty our freezer so I can fill it up with some frozen Christmas party food! Which in my opinion some can be just as good as homemade!

I try to keep ingredients for hot spinach dip on hand, as well as frozen cooked burger, taco seasoning, and frozen tacquitos to pull off a quick Mexican meal.   9. I always have a casserole or main dish in the freezer that can be quickly thawed in the microwave, baked and served in about an hour's time. Thanks for the frozen dessert idea, too. Great giveaway!

  17. Love this post. I find I rarely entertain because I want everything to be so perfect. I agree to throw out notions of perfection and the real friends won't even notice. I will have to try those enchiladas - Yum!

  30. All looks delicious, Marty. For impromptu gatherings, I ALWAYS have a bottle of champagne chilled and ready to pop open with bubbles to celebrate an occasion. It makes for a festive treat for friends who might just drop in. We also always have fresh cheeses on hand. I keep things in the freezer too. We love impromptu guests.

  32. Thanks again for another neat tip for unexpected guests. I have had the same picture hanging in my dining room since the late 60's. I bought it when I purchased my Tell City dining room set in 1967. Still have that same set.

  33. Thank you for a great post. Like some others have mentioned I always have a bottle of champagne in the refrigerator. Makes any occasion so special. My plan is I always have cooked shrimp in the freezer - that with pasta makes a quick meal. Also, we live near the Pepperidge Farm outlet, so I always have a cake or two in the freezer. Cut in slices on a plate with some chocolate sauce and a little whipped cream....perfect! Happy Holidays to you and yours !

  38. I always have ingredients for "Eva's Sauce" in my pantry and everyone loves it. I got the meat sauce recipe from a dear friend's mother so it's been around for over 60 years. I pull a french baguette out of the freezer and make garlic bread, and serve a salad. That pie sounds wonderful!

  64. I live out in the country, so impromptu gatherings are pretty unlikely, but I find that having a well-stocked kitchen means that I can pretty much toss together a good meal (or snack, or dessert) at a moment's notice. And that means a lot less anxiety when people do stop by!
