Who Cooks When It's 118° - Chicken Pasta Salad

The heat wave just continues and gets worse.  We hit 118°  the othe day and have been over 110°  for what seems like forever.  This summer was slow to start, then it just slammed us.  No warm up period, just right to the really hot stuff.  There is no way I want to cook when it is this hot.

Thank the Lord for our wonderful little pool, that is the only way you can be outside with these temps.  When we come in I just want something light and good.  This is one of my favorite go to salads.

Chicken Pasta Salad

This is the kind of salad where you clean out the fridge and add anything you have leftover.

1 can Chicken Breast meat
1 box Bow Tie pasta
chopped tomato
chopped lettuce
chopped onions

Cook the pasta and drain well.  Put in the fridge to cool, then add the chicken and chopped onions and tomatoes.  Take 1/2 cup ranch dressing and dilute with milk to a really thin consistency.  Pour over salad and mix well.
This is where you clean out the fridge.  I had some leftover sliced olives, green onions, hard boiled eggs and bacon so I added them to the salad.  I serve it on a bed of shredded lettuce drizzled with a little more dressing as a meal, or leave it plain as a side dish. 
So easy and such a light and filling meal sure to please anyone.

  1. I hate the heat and could never live where you live. The huge storms that hit us mid-week last brought a few days of flawless perfect weather in the 70s. LOVING it!

  2. I am so sorry that it is that hot there. I thought 105 was bad enough. I am already sick of all this HOT weather and long for fall. I have to be careful with COPD as I can get really ill in the high heat.

    Your salad looks wonderful - will have to try that.

  4. Marty, You have the perfect recipe for the hot, hot temps. I have a headache condition which gets worse when it's really hot - so the last thing I want to do is cook dinner. This is a great idea - because even when I don't want to cook, my family and I still have to eat.

  5. I love your salad Marty! Wow, 118° I can't imagine!! My daughter Sofia lives in a climate high to 90° and high humidity, which I don't like. But hey, inside your gorgeous house must be cool and lovely.

  7. Oh, that looks tasty! This time of year is when I go to the Chinese place and get their lunch specials (always tofu and veggies) enough for four days and I'm good to go. Tofu lasts that long and I don't mind eating it for four days. For $6.95 I get the entree, rice, egg roll, soup and fortune cookie.

  9. Oh Marty. Sorry but that sounds terrible at 118. I can't even imagine!

    Definitely eat anything that doesn't require cooking.

  11. Yum Marty. Wow those temps!!! Probably feels like walking out and into a furnace. This salad looks so good I am going to try it. Bow ties are one of my faves. Happy 4th. Stay cool. Glad you have the pool I bet that does help.

  12. Love those meals that also result in cleaning out the fridge! A temp of 118 is just awful, Marty. Thank goodness for your pool. Our "feels like" temp has been 111 and we're melting. Stay cool!

  13. I am like you. Who wants to cook when it is hot hot hot? We have been in the 90s but the ky humidity is what gets me. Ha!
