Don't you just hate it when you aren't totally 100%. I pulled a muscle in my back and I was totally down for the count for 3 days. So most of the weekend in bed or propped up with pillows. Wednesday I was feeling a little better and all I could think of was Chicken Noodle Soup. Wonder why that is the soup that soothes when you are sick or feel bad?
Anyway, easy and fast super good Chicken Noodle Soup.
2 chicken breasts diced ( or any thing you have )
1 carton chicken broth ( you can also use the granules to make broth )
2 cups water
2 carrots peeled and diced
4 stalks celery diced
1 onion diced
1 lb. pkg. noodles
Put broth and water in large pot with diced chicken, bring to a boil and simmer for approx 1 hr. or until chicken is tender.
Add the carrots, celery and onions and cook until tinder.
Add the noodles and cook until done.
Season with salt and pepper as desired and enjoy.
So good and so filling. Always makes me feel better. Hope you enjoy.

I don't know why, but yes, we love chicken soup for our ailments too, Alejandro when he has a cold, that lasts him a week, he drinks chicken soup all week long!! Our weather around here is like fall in the US, so it's soup time and you just reminded me of this yummy and fav of ours! Have a good weekend and feel better.

So sorry you are down in the back. Hate when that happens. Funny, I made chicken soup this week too. I cheated though, went to Costco & got a rotisserie chicken. Yumo! Feel better soon. I have a great chiropractor who is in Cave Creek if you need one.

Marty, I'm sorry to hear about your back. I have trouble with mine every now and then. Lately, though, I've had the weirdest pain...in one of my toes! It feels almost like it's broken at times and then at other times....no pain! I wrote about it on my blog recently, too. BUT, I just had to stop here when I saw your title about Chicken Soup. I just posted about the Chicken Soup for the Soul company...they will have their own brand of Chicken Soup, and other flavors in early 2013!!

ReplyDeleteI LOVE chicken noodle soup and like you, it always sounds good when I don't feel well..or when I can't sleep at night. Can you believe that I will open even a CAN of it and eat it cold right out of the can? Yeah. I know. Gross, but I do it! :)

My mother used to make us the best chicken soup and Santa Fe Chicken soup...we never wrote down the recipes and like so many other things, they went with her when she passed away.
