Summer's Fresh Fruit - Easy Best Peach Pie Ever

I love all the fabulous fruit that summer has to offer.  I think I always eat my weight in Watermelon and Cantaloupe.  Then there is all the wonderful Berries, Grapes and of course those fabulous Peaches, Nectarines and Plums.  Oh my goodness, I just can't seem to get enough.  While we still have some of these treasures in the grocery, I have been on a wild baking spree.

I love Peaches and it is one of my hubby's favorite things, so Pies, Cobblers and Tarts have been on the menu regularly.  Today I made a Peach Pie, so easy and this recipe is to die for.

Peach Pie

6 Peaches
1/2 c flour
1/2 c sugar
2 tblsp. lemon juice
1/4 tsp. almond extract
1/2 tsp. vanilla
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 egg beaten

Peel peaches and cut into medium chunks - place in a large bowl and sprinkle with lemon juice, almond extract and vanilla, stir to coat all the peaches.

In a small bowl mix flour, sugar, cinnamon and nutmeg, stir well, then pour over peaches.  Stir to make sure all peaches are coated.

Line a 9" pie pan with one crust. (I cheat and use the ready made crust that comes two in the box from the deli case.  I find them where the canned biscuits are.) Brush bottom with beaten egg so crust is not soggy later.  Pour peach mixture into pie crust, spread out evenly and then top with second crust.  Crimp edges to seal and then brush top crust with beaten egg and sprinkle with sugar.  Cut a few slits in top to let the heat escape as it cooks.

Bake in 450° for 10 minutes then reduce heat to 350° for an additional 30 to 35 minutes.  Cool on a rack and enjoy.

I also love that fall is around the corner and we will have tons of apples to choose from.  You might want this recipe too for those cool weather treats.
