Best Pecan Pie Ever

I know everyone always talks about Southern Pecan Pie, but if you havn’t had a piece of  Texas Pecan Pie, then you have missed out.

This recipe is one my mom copied out of a newspaper in 1938.  The article was talking about all the fabulous pecan trees in Texas and how this was voted the Best Pecan Pie recipe ever.  This pie won Blue Ribbons at several County Fairs, and was later published in dozens of cookbooks.

I wish I had the article, however, all I have is this card where my mom copied off the recipe for me.  I love seeing her handwriting as I make some of her favorite things.

Pecan Pie
 
Beat all ingredients together.
3 eggs
2/3 cup sugar
1/2 teaspoon salt
1/3 cup melted butter
1 cup dark corn syrup
Mix in 1 cup pecan halves
Pour in unbaked pie shell
Bake at 350 degrees for 40 to 50 minutes 
until center is firm.

This was the dessert we had for Mother’s Day.  I love the pie and I love the sweet memories of my mom.

    I know this is delicious and the memories make it sweeter. I have better luck if I use broken pecan pieces. The pie cuts easier and looks prettier – just my opinion. It tastes delicious regardless!
