Summer Cooking From The Garden

When the temperatures soar and it feels scorching and muggy outside, we either want to be in the pool, or inside with the air conditioning.  Cooking is also one of the last things we want to do.  It seems way too hot to eat a big meal or heat up the kitchen.  My favorite is Summer Cooking From The Garden.

I planted our garden way late this year, but we do have some fun stuff that we all enjoy from the garden. Here’s a picture of our little garden now.  It’s really full and things are growing like weeds.

We have plenty of tomatoes so we have really enjoyed them on sandwiches, in all kinds of different salads, and of course for the holiday 7-layer Bean Dip.  These two little bushes keep giving us more tomatoes.  We currently have about 25 on these two bushes.

7 Layer Bean Dip is a favorite and my tomatoes taste so good.

 

We love using them in this beautiful Summer Chicken Pasta Salad too.

We grew a bunch of radishes also, (they’re all gone, we ate them pretty fast), and we’re really enjoying our romaine lettuce.  We still have some but it will be gone soon. I think we ate our weight in a tossed salad this year.  Here’s a pic of our lettuce.

I love a nice garden salad for dinner.  Light and so filling.

We have a few stalks of corn and about 8 ears that are beginning to grow.  So soon we’ll have corn on the cob.  I can’t wait.

 

This is the first time we planted cantaloupe, we’ve only got three that are getting big, can’t wait to taste them fresh from the garden.

In the past, we’ve grown onions and love having tons of them for all kinds of dishes.

One of my favorites is Onion Rings.

Having a garden this summer has been fun, I think I will definitely plant a fall garden too.  How about you, do you like Summer Cooking From The Garden or maybe at the Farmers Market?

    Oh how wonderful that you are enjoying your garden again! Jim would be so happy to see that it’s bringing you such joy! Do you recall, when he created the raised bed, if he removed any of your existing soil/rocks, or if he just placed the new garden soil on top of the existing ground? I guess I’m asking if your planter bed soil is only as deep as the boards surrounding it. I’d love to do this but wasn’t certain if we’ll be able to just add soil to the surface (after removing our existing grass in that area). So happy for you that you have a thriving garden and abundant harvest!

    Your raised beds look to be the perfect size for fresh veggies without working yourself to the bone.

    Can you please tell us the sources for the white grids for the climbing plants and the “critter” netting? We have been using chicken wire which we have on hand but it is not friendly for the Grands.

      The white grids are some we found at a going out of business sale. Similar ones are available on Amazon. The netting is just Bird Netting that is available at amazon or any home improvement store or nursery. Thanks so much for the gracious comment. Yes, it is the perfect size for a small veggie garden.
