Lite Dutch Baby Recipe

I love these for breakfast or dessert, they are perfect anytime for a special treat.  My recipe makes a thinner lighter Dutch Baby or German Pancake.  I am sure you will love it as much as I do.  I prefer mine served with a little melted butter and a dusting of powdered sugar, but you can garnish yours with fruit, syrup, or any number of toppings.

Ingredients

  • 2 eggs 1/2 cup milk, 1/2 cup sifted flour, 1 pinch salt, 2 tablespoons butter, powdered sugar

Instructions

  • Place a 10-inch skillet (cast iron if you have) inside the oven and preheat the oven to 475 degrees.
  • In a medium bowl beat eggs with a whisk until light.  Add milk and stir.  Gradually whisk in flour and salt.
  • Remove skillet from oven and reduce oven temp to 425 degrees.  Melt butter in a hot skillet so that inside of the skillet is completely coated with butter.  Pour all the batter into the skillet and return the skillet to the oven
  • Bake until puffed and lightly browned about 10 to 12 minutes.  Remove promptly and drizzle with more melted butter if desired, and sprinkle with powdered sugar.

Notes

This is a fabulous treat to prepare with your children.  They love seeing how it climbs up the sides of the skillet and puffs up.
