Mexican Feast Under $10

I have 8 people coming for dinner and everyone loves Mexican food, so I thought I would share how to put a feast together for under $10.

Refried Beans

Chips & Salsa

This is a wonderful meal to make ahead and it can all cook in the oven at the last minute so you can relax and enjoy your guests.

 5lbs. Ground Round – Five Easy Meals

Spanish Rice – This will become your family’s all time favorite.

Add 3 or 4 tablespoons of oil to bottom of large pot, then add 2 cups of rice.

Cook on med. high, stirring frequently to brown and toast the rice.  This is important as it gives the dish a nice nutty roasted flavor.

While that is toasting, get all the other ingredients together.

1/2 yellow & red pepper diced

1 cup onion diced

1 tbl. minced garlic

1 can fire roasted garlic diced tomatoes drained

4 cups chick broth.

Toast until you see some pretty brown color on the rice.

 Add the peppers, onions and garlic.

 Stir well and cook until onions and peppers are soft and translucent.

 Stir in the drained can of tomatoes.

 Add the 4 cups of chicken broth

 Cover and simmer on low for 20 minutes.

 Check bottom of pot to make sure all the liquid is absorbed, if not turn off heat and leave pot on stove to finish absorbing the liquid.  When done, fluff with fork, transfer to a pretty oven safe dish.

45 minutes before you want to eat, put the enchiladas, rice and refried  beans in the oven at 350.

Refried beans – you can take the lid off and top with some grated cheese at the last minute if you like.

While everything is in the oven, pull out that tossed salad you made ahead of time and get out the fritos.

When I browned the meat for the enchiladas, I scooped out about 3/4 of a cup and mixed in a tsp. of taco seasonings with a few drops of water and a little of the meat drippings.   Heat this up in the micro, mix in the tossed salad with a couple of handfuls of Fritos and you have the most delicious – –

Taco Salad.

Set out your – Salsa, Guacamole, Chips and some Hot Sauce.  Gather everyone together and enjoy.  This is definitely going to be a great feast.
