August Budget Friendly Recipes

Welcome to August Budget Friendly Recipes.  Each month some of my friends and I get together to share some of our favorite recipes.  I am sure you will find some wonderful new recipes that your family will love.

This week I am sharing one of my favorite desserts.  Peach Pie.  This is so good and so easy to make.   I love Peaches and it is one of my hubby’s favorite things, so Pies, Cobblers, and Tarts have been on the menu regularly.  I got asked for some pie recipes the other day using fresh fruit, so I thought it was time to run this post again.

Best Peach Pie Ever

I love all the fabulous fruit that summer has to offer - all the wonderful Berries, Grapes and of course those fabulous Peaches, Nectarines and Plums.  Oh my goodness, I just can't seem to get enough.  While we still have some of these treasures in the grocery, I have been on a wild baking spree.  This is the Best Peach Pie Ever so be sure to give it a try.

Ingredients

  • 6 Peaches
  • 1/2 c flour
  • 1/2 c sugar
  • 2 tblsp. lemon juice
  • 1/4 tsp. almond extract
  • 1/2 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 egg beaten

Instructions

  • Peel peaches and cut into medium chunks - place in a large bowl and sprinkle with lemon juice, almond extract and vanilla, stir to coat all the peaches.
  • In a small bowl mix flour, sugar, cinnamon and nutmeg, stir well, then pour over peaches.  Stir to make sure all peaches are coated.
  • Line a 9" pie pan with one crust. (I cheat and use the ready made crust that comes two in the box from the deli case.  I find them where the canned biscuits are.) Brush bottom with beaten egg so crust is not soggy later.  Pour peach mixture into pie crust, spread out evenly and then top with second crust.  Crimp edges to seal and then brush top crust with beaten egg and sprinkle with sugar.  Cut a few slits in top to let the heat escape as it cooks.
  • Bake in 450° for 10 minutes then reduce heat to 350° for an additional 30 to 35 minutes.  Cool on a rack and enjoy.

Notes

Serve warm or cold alone or with a scoop of ice cream.  Your family will ask for more.

    Yum, Marty! As a southern born and bred girl, I love anything peach! I think I’ll make this for our Labor Day cookout.
